The Chronicle News is proud to spotlight Eric and Wendi King, the inspiring couple behind Poppa’s Cookbook. Their story is one of resilience, love, and shared purpose—proving that fairytales do come true and prayers are answered. Together, they’ve built a thriving business rooted in family, community, and the transformative power of partnership.


From Life’s Storms to a Love Story

Eric and Wendi's love story began in April 2018, grounded in mutual respect and shared values. Their connection was instant and deep, based on mutual respect, shared values, and a strong faith. Their relationship flourished into marriage during the peak of the 2020 pandemic, symbolizing their steadfast commitment to each other.


Eric's path to Wendi, whom he affectionately calls "Pretty Wendi," was marked by courage and determination. His journey was far from straightforward. From Lansing to New Orleans to Houston and back, Eric's story is one of resilience and reinvention. His return to Lansing, Michigan, was fortuitous. After Hurricane Harvey's devastation, Eric left Houston and returned to Lansing, determined to rebuild. As a Lansing native with a background in coaching, education, and insurance, Eric reconnected with his roots—and entered Wendi's life. A longtime educator and insurance professional, Eric was set on creating a new chapter. That chapter included Wendi, and together, they've built a life and business that exudes love, perseverance, and shared dreams. Their relationship grew into a marriage during the height of the 2020 pandemic—a testament to their dedication to each other despite the world's challenges.


Wendi's experiences inspired her book, “Don’t Settle for Prince Charming: A Queen Deserves a King,” which details her journey to discovering self-worth and true love. In Eric, she found her King, a partner who supports her as they grow together.


Community Roots and a Shared Mission

After earning his degree from Eastern Michigan University, Eric pursued a career in teaching before transitioning to insurance, where he founded the Eric King Agency to serve the financial needs of educators. Wendi, an educator, author, and Eric’s biggest cheerleader, complements his drive with her own unique talents. Together, they balance two businesses—Poppa’s Cookbook and the Meemic Insurance - Eric King Agency—while supporting each other in every endeavor. Their mutual respect and admiration are evident in everything they do, from running a catering business to sharing their love story at the Allen's Farmer’s Market.

Poppa’s Cookbook: Love Served on Every Plate

Eric’s love for cooking began in his childhood home, where he watched his mother create meals that brought people together. With an innate ability to replicate and reimagine dishes, Eric honed his culinary skills over the years, starting with cooking for family and friends.


The inspiration for Poppa’s Cookbook stemmed from Eric's deep love for family. Called “Poppa” by his grandchildren, Eric began cooking for them, infusing each dish with love. His wife, Wendi, known as “Lolli” to the grandkids, completes the loving pair of “Lolli and Pop.” Together, they've transformed family traditions into a culinary business. As Eric developed his catering menu, it was crafted with their grandchildren and family in mind. Thus, the recipes truly originate from Poppa’s Cookbook. Eric used his affectionate nickname “Poppa” to create the charming brand name, Poppa’s Cookbook.

The 2020 pandemic offered a silver lining for Eric, giving him the opportunity to improve his skills by exploring the art of commercial food preparation. The business gradually developed but experienced rapid growth after Eric catered an event. The idea for the business took shape at an event organized by Forrest and Theresa Bouyer's group, 'Petals and Pinecones'. During this well-attended gathering on October 17, 2024, Eric's culinary talents amazed the guests, prompting the couple to seek his catering services for many future events.


Launched officially in February 2024, Poppa’s Cookbook has become a staple of the Lansing community. Eric’s comfort foods, especially his signature chili, are fan favorites at the Allen Farmers Market, where he and Wendi share their story with patrons. His dedication has led to catering bookings beyond the market, and starting January 7, 2025, Eric will host pop-up lunches twice weekly. Eric also plans to release a cookbook, offering fans a chance to recreate the love-infused recipes that have made Poppa’s Cookbook a success.

For Eric and Wendi King, Poppa’s Cookbook is about more than food—it’s a testament to love, family, and faith. Whether cooking for their grandchildren or serving meals to the Lansing community, Eric pours his heart into every dish. Wendi, by his side, ensures their story inspires others to dream big and build together.
